  • Jackfruit, 2 cans with brine specifically, do not use syrup
  • Olive oil 2 tablespoons
  • Taco seasoning ½ teaspoon
  • Chili powder ½ teaspoon
  • 1 onion
  • 3 garlic cloves
  • Vegetable broth ½ cup
  • BBQ sauce ¼ cup (if you want to make this from scratch, you need 1 teaspoon of smoked paprika and 1/4 cup tomato paste, together these make 1 teaspoon of the steak seasoning)
  • Corn tortillas (10 of them)

To add garnish to the tacos:

  • Cilantro, ¼ cup
  • Sour cream (vegan version) or use aioli, ⅓ cup
  • 1 avocado
  • Jalapeño, sliced 1/4

How to Shred Jackfruit

You can start by breaking apart jackfruit with your fingers. From there, put the jackfruit in a colander and use a potato masher to break it down further.

Ingredients
  

  • 2 cans of jackfruit in brine not syrup
  • 1 onion
  • 2 tbsp olive oil
  • ½ cup vegetable broth
  • 3 cloves garlic
  • ¼ cup BBQ sauce home-made: ¼ cup tomato paste + 1 tsp smoked paprika = 1 tsp steak seasoning
  • ½ tsp taco seasoning
  • ½ tsp chilli powder
  • 10 corn tortillas
  • To garnish:
  • ¼ cup fresh cilantro
  • 1 avocado

  • cup vegan sour cream or aioli

Instructions
 

  • Using a fork, break apart the chunks of jackfruit into small pieces like pulled meat.  Can also use a potato masher in a colander to break up the larger chunks.  
  • Chop onion and garlic and sauté them in a heated skillet with olive oil. Once the onion is translucent, add jackfruit and cook for another 2 minutes.
  • Add vegetable broth, BBQ sauce, and seasonings. Continue cooking and stirring occasionally until the liquid is reduced.
  • Prepare the corn tortillas with the jackfruit filling, and top with fresh cilantro, avocado slices, jalapeño slices, and a drizzle of vegan sour cream.
