Beef Taco Casserole
Ingredients
- 1 pound ground beef
- 1 chopped green bell pepper
- 1 chopped red bell pepper
- 1¾ cups water
- 1 can Campbell’s condensed roasted red pepper and tomato soup
- Chili powder to taste
- 1 teaspoon onion powder
- 1 cup frozen corn
- 1½ cups uncooked instant rice
- ½ cup shredded Tex Mex cheese
Instructions
- Heat a large skillet over a high heat and then cook the ground beef and bell peppers in there for 8 minutes or until the beef is fully cooked.
- Drain off the excess grease and then add the soup, water and seasonings.
- Add the rice and corn, cover and simmer for 5 minutes or until the rice is cooked.
- Sprinkle with cheese, cover and take the pot off the heat.
- Let it sit for 5 minutes until the cheese has melted and the liquid is absorbed.
