Copycat Taco Bell Mexican Pizza
Ingredients
- 2 x 6-inch flour tortillas
- ¼ cup Mexican cheese blend
- 2 tablespoons Mexican pizza sauce see below
- 3 tablespoons taco meat see below
- 2 tablespoons refried beans
- 1 tablespoon diced fresh tomatoes
FOR THE PIZZA SAUCE:
- ¼ cup salsa
- ¼ cup pizza sauce
- 1 tablespoon diced green chilies
- 2 tablespoons red enchilada sauce
FOR THE TACO MEAT:
- ½ pound ground beef
- 1 tablespoon taco seasoning
- OPTIONAL TOPPINGS:
- 1 tablespoon sour cream
- 1 tablespoon guacamole
- 1 tablespoon chopped green onions
NOTE: The taco meat is enough for 8 pizzas while the sauce is enough for 5 pizzas. The rest is for each pizza.
Instructions
- Cook the ground beef in oil for several minutes, breaking it up with a wooden spoon.
- Add the taco seasoning and, when the beef is completely browned, take it off the heat.
- Whisk the pizza sauce ingredients together and refrigerate until needed.
- Preheat the oven to 375°F.
- Spray the tortillas with cooking spray and poke holes using a toothpick.
- Bake on a wire rack for 10 minutes or until lightly golden. Set them aside.
- Turn the oven up to 425°F.
- Put one crispy tortilla on a flat surface and spread refried beans over it.
- Add some taco mean and some cheese too if you like (or omit the cheese here).
- Put the other tortilla on top and then add the pizza sauce and plenty of cheese on top, along with diced tomatoes.
- Bake for 3 to 5 minutes to melt the cheese, then serve warm with your preferred toppings.
