There are other sweet onion varieties but Vidalia are the best-known and, according to just about everyone in Georgia, the best.

While it cooks, the cheese melts and blends with the butter and herbs to make a thick and tasty sauce. This pairs so well with any kind of main dish, so try it alongside anything from grilled chicken to steaks, ribs, or take it along to a potluck meal. You just can’t go wrong with this amazing onion side dish.

Ingredients
  

  • 2 ½ pounds about 3 big ones sweet onions, in ¼-inch to ½-inch slices
  • 1 teaspoon dried parsley flakes
  • ¼ teaspoon cayenne pepper
  • 4 ounces 1 cup shredded gouda cheese
  • 4 ounces 1 cup shredded cheddar cheese
  • 1 teaspoon dried thyme
  • 1 teaspoon garlic salt
  • 1 teaspoon dried parsley flakes
  • ½ dry mustard
  • ½ teaspoon dried oregano
  • ¼ cup chopped salted butter
  • Nonstick cooking spray as needed

Instructions
 

  • Preheat the oven to 325 degrees F and spritz cooking spray over a 13×9-inch baking sheet.
  • Toss the onion slices in a bowl with parsley, thyme, oregano, garlic salt, cayenne pepper, and mustard.
  • Transfer into the greased baking dish and dot the butter on top.
  • Sprinkle the cheese on top.
  • Now cover the baking dish with aluminum foil and bake for about 40 minutes or until the onions are soft.
  • Discard the foil and bake for half an hour more or until golden brown on top.

Can You Make It Ahead?

You can prepare the dish ahead if you want. Just keep it refrigerated until you’re ready to cook it.

Storage Instructions:

You’re unlikely to have leftovers but, if you do, keep them refrigerated in an airtight container and eat within 3 days. You can microwave them or reheat them on the stove.

Variations and Substitutions:

Feel free to use any type of cheese you want here. Also, you can use other onions. Walla walla are good if you can’t find Vidalia. You can even use regular yellow onions (perhaps add a pinch of white sugar to the dish, in this case).
