Healthy Taco Shrimp Lettuce Wraps
Ingredients
- 1 pound fresh or thawed shrimp
- ⅓ cup olive oil
- Juice of 1 lime
- 1 package taco seasoning
FOR THE SALAD:
- 8 lettuce leaves
- ½ cup corn kernels
- ½ minced small onion
- 7 ounces diced tomatoes
- 2 tablespoons chopped fresh cilantro
- ¼ teaspoon garlic powder
- 2 tablespoons olive oil
- Salt and black pepper to taste
FOR THE MASHED AVOCADOS:
- 2 avocados
- Juice of ½ a lime
FOR THE SOUR CREAM SAUCE:
- 6 ounces sour cream
- ½ teaspoon white sugar
- Zest and juice of ½ a lime
Instructions
- Toss the shrimp with the olive oil, lime juice and taco seasoning and leave to marinate for 30 minutes.
- Cook the shrimp in a skillet over a moderate heat and then pour the marinade into the skillet and stir.
- Toss the salad ingredients together in a bowl.
- Mash the avocados with lime juice and salt in another bowl.
- Whisk the sour cream sauce ingredients together in a third bowl.
- Wash and dry the lettuce leaves.
- Top with avocado mash, the salad filling, shrimp, and sour cream sauce.
- Add cilantro on top and serve.
