Ingredients
  

  • 1 pound fresh or thawed shrimp
  • cup olive oil
  • Juice of 1 lime
  • 1 package taco seasoning

FOR THE SALAD:

  • 8 lettuce leaves
  • ½ cup corn kernels
  • ½ minced small onion
  • 7 ounces diced tomatoes
  • 2 tablespoons chopped fresh cilantro
  • ¼ teaspoon garlic powder
  • 2 tablespoons olive oil
  • Salt and black pepper to taste

FOR THE MASHED AVOCADOS:

  • 2 avocados
  • Juice of ½ a lime

FOR THE SOUR CREAM SAUCE:

  • 6 ounces sour cream
  • ½ teaspoon white sugar
  • Zest and juice of ½ a lime

Instructions
 

  • Toss the shrimp with the olive oil, lime juice and taco seasoning and leave to marinate for 30 minutes.
  • Cook the shrimp in a skillet over a moderate heat and then pour the marinade into the skillet and stir.
  • Toss the salad ingredients together in a bowl.
  • Mash the avocados with lime juice and salt in another bowl.
  • Whisk the sour cream sauce ingredients together in a third bowl.
  • Wash and dry the lettuce leaves.
  • Top with avocado mash, the salad filling, shrimp, and sour cream sauce.
  • Add cilantro on top and serve.
