Variations and Substitutions:

Swap the beef for pork, chicken or turkey or the cheese for another kind such as a Mexican blend or monterey jack. Flour tortillas will work in place of the corn ones if that’s your preference. If you don’t have oven-safe dinner plates, you can make these on baking trays then transfer to plates.

Everyone is going to love this delicious enchilada layer main dish with beef, onion, cheese, and fried eggs. It’s an unusual recipe which is quick and simple to prepare and sure to be a hit.

Ingredients
  

  • 30 ounces red enchilada sauce
  • 1 pound ground beef
  • 1 chopped yellow onion
  • 8 ounces shredded cheddar cheese
  • 8 eggs
  • 12 small corn tortillas
  • Salt and black pepper to taste

Instructions
 

  • Cook the beef in a skillet over a moderate to high heat, using a wooden spoon to break up the chunks.
  • When it’s no longer pink, add some salt and pepper, and take it off the heat.
  • Drain off the excess grease if you want.
  • Preheat the oven to 350 degrees F.
  • Heat the enchilada sauce in a pot until bubbling hot.
  • Dip a corn tortilla into the hot sauce, then put it on an oven-safe plate.
  • Add a spoonful of beef
  • Then cheese and onion on top.
  • Repeat twice more so you have 4 plates, each with 3 stacks on.
  • Put in the oven until the cheese melts.
  • Top each one with 2 fried eggs and serve immediately.
