Mexican Style Lasagna
Ingredients
- 1 pound ground beef
- 30 ounces refried beans
- 1 package taco seasoning
- 2 cups cooked rice
- 1½ cups mild salsa
- 8 taco size flour tortillas cut in half
- 1 cup chopped cilantro
- 2 cups shredded cheddar cheese
Instructions
- Preheat the oven to 350°F.
- Heat a skillet and add the ground beef, cooking until browned.
- Stir in the taco seasoning and transfer this beef mixture into a bowl.
- Mix the beans, chilies and half the salsa in a second bowl.
- Mix the rice and remaining salsa in a third bowl, then mix in the ground beef mixture.
- Add ½ cup of the beans mixture to a greased 9 x 13-inch baking dish and top with a layer of tortilla halves.
- Top with more beans and then a layer of the rice mixture.
- Add a layer of cheese and keep layering until you’ve used all the ingredients, finishing with a cheese layer.
- Bake for 30 minutes, garnish with cilantro and serve.
