Mexican Style Lasagna

Sometimes it’s fun to combine more than one cuisine and try something different. This recipe infuses a classic Italian lasagna with south of the border Mexican flavors for a dish that’s a little of each – part Italian and part Mexican. If you love both of those cuisines, then you’re guaranteed to enjoy this lasagna!

This makes a wonderful dinner for a weeknight and the whole family will love this seasoned beef, cheese, rice, and beans mixture. You need lean ground beef (at least 80% lean) and any kind or brand of taco seasoning.

Refried beans, chopped chilies and salsa also go into the Mexican lasagna, as does cooked rice, cheese, and cilantro. As for the tortillas, soft taco-sized flour ones work well and those are used in place of lasagna noodles to add Mexican flair to the recipe.

Mexican Style Lasagna

This fantastic fusion dish is so tasty. It’s a hearty collection of Mexican ingredients, layered up like a lasagna and baked to perfection. If you like Mexican food and Italian cuisine, you’ll love it for sure.

Ingredients
  

  • 1 pound ground beef
  • 30 ounces refried beans
  • 1 package taco seasoning
  • 2 cups cooked rice
  • cups mild salsa
  • 8 taco size flour tortillas cut in half
  • 1 cup chopped cilantro
  • 2 cups shredded cheddar cheese

Instructions
 

  • Preheat the oven to 350°F.
  • Heat a skillet and add the ground beef, cooking until browned.
  • Stir in the taco seasoning and transfer this beef mixture into a bowl.
  • Mix the beans, chilies and half the salsa in a second bowl.
  • Mix the rice and remaining salsa in a third bowl, then mix in the ground beef mixture.
  • Add ½ cup of the beans mixture to a greased 9 x 13-inch baking dish and top with a layer of tortilla halves.
  • Top with more beans and then a layer of the rice mixture.
  • Add a layer of cheese and keep layering until you’ve used all the ingredients, finishing with a cheese layer.
  • Bake for 30 minutes, garnish with cilantro and serve.
