This easy beef taco casserole offers some really tasty flavors. It is very simple to prepare and makes a hearty and satisfying dinner.

Ingredients
  

  • 1 pound ground beef
  • 1 chopped green bell pepper
  • 1 chopped red bell pepper
  • cups water
  • 1 can Campbell’s condensed roasted red pepper and tomato soup
  • Chili powder to taste
  • 1 teaspoon onion powder
  • 1 cup frozen corn
  • cups uncooked instant rice
  • ½ cup shredded Tex Mex cheese

Instructions
 

  • Heat a large skillet over a high heat and then cook the ground beef and bell peppers in there for 8 minutes or until the beef is fully cooked.
  • Drain off the excess grease and then add the soup, water and seasonings.
  • Add the rice and corn, cover and simmer for 5 minutes or until the rice is cooked.
  • Sprinkle with cheese, cover and take the pot off the heat.
  • Let it sit for 5 minutes until the cheese has melted and the liquid is absorbed.
  • Enjoy!
