Green Chili Meatloaf
Ingredients
- 1 ½ pounds ground beef or turkey
- 1 seeded minced jalapeno
- 2 minced garlic cloves
- 2 teaspoons smoked paprika
- 2 tablespoons ancho chili powder
- ½ teaspoon salt
- ½ teaspoon ground cumin
- 1 chopped chipotle
- 1 teaspoon dried oregano
- 2 tablespoons ketchup
- ½ cup chopped onions
- 1 egg
- 1 cup crushed tortilla chips
FOR THE TOPPING:
- ⅓ cup ketchup
- 1 cup shredded cheese any kind
- 1 drained small can green chilies or hatch chilies
FOR THE SAUCE:
- ⅓ cup ketchup
- 1 teaspoon minced chipotle
- ½ teaspoon garlic powder
Instructions
- Preheat the oven to 350°F.
- Combine all the ingredients except the topping and sauce ingredients using your hands.
- Shape half this mixture into a long flat loaf and put it in a greased 9 x 13-inch baking dish.
- Spread half of the ⅓ cup ketchup over the top, then add 1 cup of shredded cheese, half the green chilies, and then the remaining ketchup.
- Repeat with the remaining meat mixture and remaining toppings.
- Now combine the sauce ingredients and spread it all over the meatloaf.
- Bake for an hour, draining off any excess grease if you want, then serve hot.
