Corn tortillas are layered with enchilada sauce, ground beef, cheese, and onions, and then baked in the oven for a stacked dish that tastes wonderful.
The unusual touch in this recipe is the addition of fried eggs on top, and they add visual appeal as well as a contrasting flavor. If you don’t want to use the fried eggs, simply omit them from the recipe.
There are plenty of ways to personalize this dish such as upping the spice factor by using a spicy enchilada sauce or adding some chopped or minced chilies. You can add some vegetables, such as mushrooms or zucchini, adding them to the beef while it cooks.

Variations and Substitutions:
Swap the beef for pork, chicken or turkey or the cheese for another kind such as a Mexican blend or monterey jack. Flour tortillas will work in place of the corn ones if that’s your preference. If you don’t have oven-safe dinner plates, you can make these on baking trays then transfer to plates.
