This easy chicken rice taco casserole is so good. You can make it in the slow cooker and top it with all your favorite taco toppings to make the kind of dinner everyone is going to enjoy and want again and again.

Ingredients
  

  • 2 pounds boneless skinless chicken breasts or thighs
  • 10½ ounces cream of chicken soup
  • ounce box cheesy Mexican rice
  • 10 ounces Rotel tomatoes with chilies
  • 1 package taco seasoning

Instructions
 

  • Put the chicken in your crockpot.
  • Mix together the soup, tomatoes (not drained) and taco seasoning and pour over the chicken.
  • Cover and cook for 6 hours on low or 3 hours on high, until the chicken is cooked through.
  • Shred the chicken in the slow cooker using a pair of forks.
  • Follow the package directions to make the rice and stir this into the chicken mixture.
  • Serve with your favorite toppings.
  • Enjoy!
