Beef Enchiladas

These simple and delicious beef enchiladas are easy to make and offer such a wonderful flavor in every bite. You can make them as mild or as spicy as you want.

Ingredients
  

  • 2 pounds ground beef
  • ¾ cup water
  • 1 tablespoon salt
  • 2 tablespoons chili powder
  • teaspoons ground cumin
  • tablespoons ground paprika
  • pounds shredded cheddar cheese
  • 1 teaspoon garlic powder
  • 25 corn tortillas

FOR THE SAUCE:

  • ½ cup vegetable oil
  • ½ cup all-purpose flour
  • ½ teaspoon garlic powder
  • 1 tablespoon ground paprika
  • 3 teaspoons ground cumin
  • cups water
  • 1 teaspoon salt
  • 1 tablespoon chili powder

Instructions
 

  • Cook the beef in a skillet and add ¾ cup of water, the seasonings and finally the flour.
  • Cook for 2 minutes and then take it off the heat. Stir in the cheese.
  • Preheat the oven to 350°F.
  • Now make the sauce. Heat the oil in a pot and add the flour, whisking so it doesn’t get lumpy.
  • Add the seasonings and then the water and whisk until smooth and slightly thickened.
  • Dip the tortillas in the warm sauce.
  • Then, fill with the beef mixture and roll up, arranging them in a greased baking dish.
  • Sprinkle cheese on top
  • Bake for 10 minutes or until the cheese melts.
