Better-Than-Taco Bell Mexican Pizza Recipe

Everyone always goes wild for these Taco Bell Mexican pizza copycats. They’re really easy to create and allow you to skip the drive-thru line and enjoy your homemade pizza creations instead.

Ingredients
  

  • 8 x 8-inch flour tortillas
  • 1 cup warmed refried beans
  • 2 tablespoons canola oil
  • ½ cup taco sauce
  • 1 cup cooked Mexican-seasoned ground beef
  • 1 cup shredded Mexican cheese blend
  • 1 cup shredded mozzarella cheese
  • ¼ cup red enchilada sauce
  • ½ cup diced tomatoes
  • 3 tablespoons chopped green onions
  • 3 tablespoons sliced black olives

Instructions
 

  • Preheat the oven to 400°F.
  • Heat 1 tablespoon of oil in a skillet and pan fry the tortillas individually for a couple of minutes per side or until golden brown.
  • Drain on paper towels.
  • Put 4 fried tortillas on a baking sheet and divide the refried beans between them, spreading them out evenly.
  • Divide the ground beef between them.
  • Put the other 4 tortillas on top.
  • Combine the taco sauce with the enchilada sauce and spoon this over the tortillas, spreading it out evenly.
  • Sprinkle the cheese over each one and then bake for 3 or 4 minutes or until the cheese melts.
  • Serve cut into 4 wedges and topped with the black olives, diced tomatoes, green onions, and anything else you like.
