Calabacitas Con Carne Molida En Salsa Verde
This unusual dish is just bursting with wonderful flavors. The beef and zucchini contrast really nicely and the south of the border seasonings make it a real crowd-pleaser.

- 1 ½ C. Water
- 2 lbs. Ground chuck
- 1 Tbsp. Chicken Boullion
- Salt
- 4 Medium zucchini slices
- Onion powder
- Black pepper
For the salsa:
- 3 Serrano chiles
- 3 Tomatoes
- 2 Garlic cloves
- 2 Tomatillos
- Handful of cilantro
Boil the ingredients for the salsa in a pot of water until tender, and then set aside to rest.
Add the beef, garlic powder, onion powder and black pepper to a pot over medium high heat, and sear until the beef is cooked through.
Blend the salsa ingredients to your desired consistency.
Drain the excess fat from the meat, and pour in the salsa and zucchini.
Simmer for 10 minutes and then serve.
