Carne Guisada
This hearty carne guisada is a Mexican staple. It’s a rich and filling stew which offers that cozy stick-to-the-ribs quality we all crave sometimes.

- 3 pounds beef stew meat
- 2 teaspoon ground cumin
- ½ teaspoon black pepper
- 3 tablespoons tomato sauce or 1 diced fresh tomato
- 2 teaspoons salt
- 3 minced garlic cloves
- 2 tablespoons all-purpose flour
- 1 cup chicken broth or water
- 1 tablespoon oil or lard
- 1 diced yellow onion
- 1 diced small green bell pepper optional
- Flour tortillas to serve
Brown the meat with the onion (and bell pepper if using) in a large pot.
Add the tomato sauce, garlic, cumin, and some salt and black pepper.
Sprinkle over the flour and stir, then add the broth and stir until free from lumps of flour.
Bring the mixture to a boil and then turn the heat down, cover and simmer gently until the meat is tender. This takes about 1½ hours.
Taste and adjust the seasonings if needed, and then serve hot with flour tortillas.
