Carne Guisada

This hearty carne guisada is a Mexican staple. It’s a rich and filling stew which offers that cozy stick-to-the-ribs quality we all crave sometimes.

Ingredients
  

  • 3 pounds beef stew meat
  • 2 teaspoon ground cumin
  • ½ teaspoon black pepper
  • 3 tablespoons tomato sauce or 1 diced fresh tomato
  • 2 teaspoons salt
  • 3 minced garlic cloves
  • 2 tablespoons all-purpose flour
  • 1 cup chicken broth or water
  • 1 tablespoon oil or lard
  • 1 diced yellow onion
  • 1 diced small green bell pepper optional
  • Flour tortillas to serve

Instructions
 

  • Brown the meat with the onion (and bell pepper if using) in a large pot.
  • Add the tomato sauce, garlic, cumin, and some salt and black pepper.
  • Sprinkle over the flour and stir, then add the broth and stir until free from lumps of flour.
  • Bring the mixture to a boil and then turn the heat down, cover and simmer gently until the meat is tender. This takes about 1½ hours.
  • Taste and adjust the seasonings if needed, and then serve hot with flour tortillas.
  • Enjoy!
