Ingredients

  • 1 Romaine Heart
  • 2 Roma Tomatoes
  • 8 oz. Ground Beef
  • 1 Red Onions
  • 6 fl. oz. Red Enchilada Sauce
  • 6 fl. oz. Green Enchilada Sauce
  • ½ cup Refried Beans
  • 3 oz. Cheddar-Jack Cheese Shredded
  • 2 oz. Sour Cream
  • 2 Tbsp. Home Chef Southwest Seasoning Blend
  • 4 Large Flour Tortillas

Instructions

  • Prepare Ingredients: Rinse all produce thoroughly and pat dry. Dice the onion and tomatoes into small 1/4-inch pieces, and shred the lettuce.
  • Cook Beef and Beans: In a medium pan over medium heat, add 1 tsp olive oil, half the diced onion, beef, and Southwest seasoning. Cook until the beef is browned and no pink remains (about 5-8 minutes). Add refried beans and 1/4 cup water, cooking until water is absorbed, beans are evenly combined, and the texture is thick. Season with salt and pepper, then set aside.
  • Heat Sauces: Warm the red and green sauces in two separate small pots over medium heat for 2-3 minutes, or microwave each in small bowls for 1-2 minutes. Season both sauces with salt and pepper as needed.
  • Fill and Roll Burritos: Microwave 2 tortillas wrapped in a dish towel until soft (about 1 minute). Fill each tortilla with beef mixture, remaining onion (to taste), one-third of the cheese, tomatoes, and lettuce. Fold the sides, then the bottom, and roll tightly to form burritos. Cut each burrito in half.
  • Plate and Garnish: Spoon half of the red and green sauces onto opposite sides of the plate. Arrange remaining lettuce and tomatoes in the center, placing burrito halves on top. Spoon remaining sauces over burritos and garnish with sour cream and the remaining cheese.
