Creamy Beef Taco Soup

You’re going to love this tasty soup. It’s rich in flavor, meaty, creamy and really good. It’s a cozy, meaty dish and everyone is going to want a second bowlful.

Ingredients
  

  • 28 oz. Diced tomatoes
  • 2 lbs. Ground beef
  • 4 oz. Salsa
  • 1 Small onion diced
  • 2 Taco seasoning packets
  • 1 Bell pepper diced
  • 4 oz. Cream cheese softened
  • 2 tsp. Minced garlic
  • 1 C. Heavy whipping cream
  • 24 oz. Beef broth
  • 2 C. Shredded cheddar cheese

Instructions
 

  • Add the ground beef, bell peppers and onions to a skillet, and saute until the meat is completely browned and the vegetables are softened.
  • Place the meat mixture into an Instant Pot, then Mix in the tomatoes, beef broth, salsa, garlic and taco seasoning.
  • Stir to combine.
  • Close the lid, and make sure the dial is set to sealing.
  • Cook on high for 2 minutes, and then allow the Instant Pot to complete a natural release before opening.
  • Stir in the cream cheese, heavy whipping cream and cheddar cheese.
  • Serve garnished with your favorite toppings.
