Creamy Beef Taco Soup Recipe

Easy to make and almost too easy to eat, this rich and hearty beef taco soup offers all those beef tacos you love but in a soup format. It’s so tasty and everyone will love it.

Ingredients
  

  • 2 pounds ground beef
  • 2 minced garlic cloves
  • 1 chopped bell pepper
  • 1 chopped small onion
  • 4 ounces salsa
  • 28 ounces canned diced tomatoes
  • 24 ounces beef broth
  • 2 packages taco seasoning mix
  • 4 ounces cream cheese at room temperature
  • 2 cups shredded cheddar cheese
  • 1 cup heavy cream

Instructions
 

  • Cook the ground beef with the bell pepper and onion in a soup pot on the stove until the beef is done.
  • Stir in the beef broth, garlic, salsa, tomatoes, and taco seasoning.
  • Bring the mixture to a simmer and then cover and turn the heat down.
  • Simmer gently for 30 minutes.
  • Stir in the heavy cream, cheddar and cream cheese.
  • When the cheese has melted into the soup, adjust the seasonings if needed and then serve hot.
