Ensalada de Coditos con Atún

This tasty tuna and macaroni salad is so easy to prepare and makes a delicious lunch. It’s also ideal for potluck suppers or for BBQs.

Ingredients
  

  • 2 cups elbow macaroni
  • ¾ cup mayonnaise
  • ¾ cup sour cream
  • 15 ounces canned tuna drained
  • ½ cup diced red onion
  • 2 teaspoons garlic salt
  • Black pepper to taste
  • 15 ounces mixed vegetables drained
  • cup chopped pickled jalapenos
  • Juice of 1 lime

Instructions
 

  • Bring a pot of water to a boil and then add the macaroni and cook until al dente.
  • Meanwhile stir the mayo, sour cream, garlic salt, lime juice, and black pepper in a bowl.
  • Add the pickled jalapenos and red onion to the mayo mixture, and then add the tuna and veggies and stir again.
  • Drain the macaroni and rinse with cold running water until cool.
  • Add the drained pasta to the bowl and stir everything well.
  • Put it in the refrigerator to chill for an hour before serving.
