Green Chile Chicken And Potato Soup
This spicy chicken soup is a real pick-me-up if you want to enjoy something delicious. It’s such a simple recipe to make and you can adjust how spicy you want it - anything from very mild to super-spicy is possible!

- 1 shredded cooked chicken breast
- 7 ounces chopped green chilies
- 1 pound peeled diced russet potatoes
- 2 teaspoons butter
- ½ chopped yellow onion
- 1 teaspoon dried oregano
- 1 teaspoon kosher salt
- ½ teaspoon black pepper
- ½ teaspoon dried marjoram
- 4 cups chicken broth
- 3 thinly sliced celery stalks
Melt the butter in a large, heavy pot.
Add the celery and onion and saute for 4 minutes or until tender.
Add the rest of the ingredients and bring the soup to a boil.
Turn down the heat and simmer for 10 to 15 minutes or until the potatoes are tender.
