- 2 cups cooked brown rice (from about ¾ cup uncooked)
- 1 ½ pounds boneless skinless chicken breasts, cut into thin strips (about ½-inch thickness)
- 1 large bell pepper sliced
- 1 small onion sliced
- 1 can diced tomatoes 14.5 oz. can (I use fire-roasted), well drained
- 1 tablespoon extra-virgin olive oil
- 1 ½ teaspoons ground cumin
- ½ teaspoon dried oregano
- ½ teaspoon salt
- ¼ teaspoon cayenne pepper (optional)
- ¼ teaspoon black pepper
- ⅛ teaspoon garlic powder
- ⅛ teaspoon onion powder
- 1-2 cups shredded cheddar cheese
Preheat your oven to 400°F and give a 9x13 or 2-quart casserole dish a good spray of cooking spray. Set it aside and get ready for some deliciousness!
