Jalapeno Popper Chicken Taquitos

These wonderful crunchy taquitos might look like ordinary taquitos on the outside but once you bite through that crispy tortilla shell you will find all those jalapeno popper flavors you know and love, along with chicken, bacon and the comfort food appeal of classic taquitos.

Ingredients
  

  • 8 ounces softened cream cheese
  • 2 cups shredded cooked chicken
  • ½ cup shredded Monterrey Jack mozzarella or cheddar cheese
  • 8 chopped cooked bacon slices
  • 2 finely sliced green onions
  • 4 finely diced jalapeno peppers
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 minced garlic cloves
  • 16 corn tortillas
  • Oil or cooking spray as needed

OPTIONAL ACCOMPANIMENTS:

  • Sour cream
  • Ranch dressing
  • Salsa
  • Hot sauce
  • Guacamole or avocado slices
  • Cilantro

Instructions
 

  • Preheat the oven or air fryer to 350 degrees F.
  • Mix the cream cheese, shredded cheese, chicken, bacon, jalapenos, green onions, salt, black pepper, and garlic in a large bowl.
  • Divide this filling between the corn tortillas (2 or 3 tablespoons in each) and roll them up tightly.
  • Brush with oil or spritz with cooking spray.
  • Either air fry for 6 to 8 minutes or arrange on a parchment paper lined tray and bake for 10 to 15 minutes. You can finish them off under the broiler if you want them crispier still.
  • Serve hot with your chosen accompaniments.
