Mexican Casserole Recipe
This simple Mexican casserole is quick and easy to prepare and you can experiment with the ingredients. Perhaps this will become a new family favorite!

- 1 pound ground beef
- 10- ounce bag tortilla chips crushed
- 1 can ranch style beans
- 1 chopped small onion
- 1 can Rotel tomatoes
- 1 can cream of chicken soup
- 1 package taco seasoning
- 2 cups shredded cheddar cheese
- ½ cup water
- Salsa and sour cream to serve
Preheat the oven to 325°F.
Brown the beef in a skillet and drain off the excess fat.
Stir in the tomatoes, beans, onion, soup, water, and taco seasoning.
Simmer until everything is hot.
Put a layer of crushed tortilla chips in a greased 9 x 13-inch baking dish.
Spoon the meat mixture on top.

repeat these layers.
Cover with foil and bake for 25 minutes or until bubbling.
Let it sit for 10 minutes and then serve with salsa and sour cream.
