Preheat the oven to 375°F.
Grease a 9x13-inch casserole dish with cooking spray and set it aside.
In a skillet over medium-high heat, spray with cooking spray and add the diced onion and ground beef. Cook until the beef is browned and fully cooked, breaking it up as it cooks. Drain any excess grease.
Add the taco seasoning to the beef mixture and stir until well combined.
Stir in the enchilada sauce, drained corn, and drained black beans. Mix everything until evenly combined.
Pour the beef and vegetable mixture into the prepared casserole dish.
Sprinkle half of the shredded cheese on top of the mixture.
Evenly distribute the tater tots over the cheese layer, then sprinkle the remaining cheese on top.
Bake for 35 minutes or until the tater tots are golden and the cheese is melted.
