Migas
Migas are fantastically easy to prepare and one of the best hot breakfast dishes you can make if you have a hankering for something spicy, hot and satisfying to start your day off on a great note.

- 10 corn tortillas
- 1 cup shredded cheese optional
- 1 diced tomato
- 1 diced jalapeno
- Milk as needed
- ¼ diced onion
- 6 eggs
- Salt and black pepper to taste
Cut the corn tortillas into small pieces, then fry in oil in a skillet in 2 batches.
Remove the fried tortilla pieces to a bowl and add the tomato, jalapeno and onion to the skillet.
Beat the eggs with a splash of milk.
Add the tortillas back into the skillet with the vegetables.
Then mix in the eggs and some salt and black pepper.
Stir well,
Top with cheese, if liked, and serve hot.
