Nachos With Guacamole

- 2 ripe avocados peeled and chopped
- 2 Tbs. fresh lemon juice
- 2 cloves garlic minced
- 1/2 tsp. Salt
- 2 Tbs. chopped cilantro
- 24 large corn tortilla chips
- 3/4 cup canned vegetarian refried beans
- 6 oz. shredded Jalapeño Jack cheese
Preheat the oven to 450°F. In a medium bowl, mash the avocados with a fork, then mix in the lemon juice, garlic, and salt. Set the guacamole aside.
Spread a thin layer of beans on each chip. Arrange the chips on a baking sheet and top with cheese.
Bake for about 5 minutes, or until the cheese is melted and bubbly.
Serve the cheesy chips with the guacamole on the side.
