Nachos With Guacamole

It’s a fun, shareable dish with layers of flavors, from the cheesy nachos to the fresh, zesty guacamole, that’s perfect for any gathering.

Ingredients
  

  • 2 ripe avocados peeled and chopped
  • 2 Tbs. fresh lemon juice
  • 2 cloves garlic minced
  • 1/2 tsp. Salt
  • 2 Tbs. chopped cilantro
  • 24 large corn tortilla chips
  • 3/4 cup canned vegetarian refried beans
  • 6 oz. shredded Jalapeño Jack cheese

Instructions
 

  • Preheat the oven to 450°F. In a medium bowl, mash the avocados with a fork, then mix in the lemon juice, garlic, and salt. Set the guacamole aside.
  • Spread a thin layer of beans on each chip. Arrange the chips on a baking sheet and top with cheese.
  • Bake for about 5 minutes, or until the cheese is melted and bubbly.
  • Serve the cheesy chips with the guacamole on the side.
