Ribeye Steak Tacos

- 2 lbs shaved or thinly slice ribeye steak
- 1/2 package corn tortillas
- Cilantro - 1/2 cup chopped
- 2 limes cut into wedges
- 1/2 block of queso fresco cubed.
- Avocado - 1 whole sliced
- 1 tbsp chipotle chili powder
- 1 tbsp ground cumin
- 1/2 tsp salt
- 1/2 tsp garlic powder
- 1 tsp black pepper
- 1 cup red salsa optional
- 1 cup salsa verde optional
- 1/4 cup diced jalapeños optional
Combine dry spices, then rub them onto thinly sliced ribeye steak strips. Squeeze the juice of 1 lime over the steak and let it sit briefly (no more than 30 minutes).
Prepare the toppings by slicing limes, chopping cilantro, dicing cheese, and slicing avocados. Set out salsa and any additional toppings like diced onions, chorizo, or pineapple.
Warm corn tortillas on a lightly sprayed cast iron skillet, cooking each for about 1.5 minutes per side. Stack them on a plate for serving.
Cook the seasoned steak strips in a hot cast iron pan for about 2 minutes, or until they reach your desired doneness. Build your tacos by adding the steak and toppings to the tortillas.
