Zesty Lime Shrimp and Avocado Salad

This gorgeous ceviche-inspired salad with shrimp, avocado and lime is fresh, vibrant and really delicious. It’s great any time but especially good during the hotter months when you crave light dishes.

Ingredients
  

  • 1 pound cooked peeled, chopped jumbo shrimp
  • ¼ cup chopped red onion
  • 1 diced tomato
  • 1 diced avocado
  • 1 teaspoon extra-virgin olive oil
  • Juice of 1 limes
  • ¼ teaspoon salt and ⅛ teaspoon black pepper
  • 1 tablespoon chopped cilantro
  • 1 finely diced de-seeded jalapeno

Instructions
 

  • Put the onion, lime juice, oil, salt, and pepper in a bowl and let it sit for 5 minutes.
  • Toss the shrimp with the avocado, jalapeno, and tomato.
  • Now combine everything together including the cilantro and toss gently.
  • Add more salt and/or pepper if needed.
  • Enjoy!
