Serve these hot from the oven with the cold toppings added just before serving. You can offer additional toppings on the side if you like, such as salsa, guacamole or avocado slices.
Can You Make This Ahead?
You can cook the taco beef ahead of time if you want, but don’t assemble the nachos ahead because they’d just get soggy.
Storage Instructions
Leftovers will keep for a day or so in the refrigerator but they will get soggy after a while, as the juices soak into the chips.

Use any kind of cheese you like (Mexican blend cheese is always good) and offer extras (perhaps jalapeno slices or hot sauce) on the side.
Nacho Tacos
Ingredients
- 1 bag tortilla chips
- 1 pound ground beef
- 1 cup diced tomatoes
- ½ cup diced red onions
- 1 package taco seasoning
- 1 cup shredded cheddar cheese
- ¼ cup diced red bell pepper
- ¼ cup sour cream
- ¼ cup chopped cilantro
- ½ cup sliced black olives
Instructions
- Saute the beef in a skillet until completely browned, then drain off any excess grease.
- Stir in the taco seasoning along with however much water the package directions say.
- Simmer for 5 to 7 minutes.
- Preheat the oven to 350°F.
- Spread one layer of tortilla chips over a baking sheet and spoon the beef mixture on top.
- Add the cheese and bake for 8 to 10 minutes or until the cheese is bubbling.
- Top with the olives, tomatoes, onions, bell pepper, cilantro, and sour cream, and serve warm.
