- 1 Red Onions
- 6 fl. oz. Red Enchilada Sauce
- 6 fl. oz. Green Enchilada Sauce
- ½ cup Refried Beans
- 3 oz. Cheddar-Jack Cheese Shredded
- 2 oz. Sour Cream
- 2 Tbsp. Home Chef Southwest Seasoning Blend
- 4 Large Flour Tortillas
Instructions
- Prepare Ingredients: Rinse all produce thoroughly and pat dry. Dice the onion and tomatoes into small 1/4-inch pieces, and shred the lettuce.
- Cook Beef and Beans: In a medium pan over medium heat, add 1 tsp olive oil, half the diced onion, beef, and Southwest seasoning. Cook until the beef is browned and no pink remains (about 5-8 minutes). Add refried beans and 1/4 cup water, cooking until water is absorbed, beans are evenly combined, and the texture is thick. Season with salt and pepper, then set aside.
- Heat Sauces: Warm the red and green sauces in two separate small pots over medium heat for 2-3 minutes, or microwave each in small bowls for 1-2 minutes. Season both sauces with salt and pepper as needed.
- Fill and Roll Burritos: Microwave 2 tortillas wrapped in a dish towel until soft (about 1 minute). Fill each tortilla with beef mixture, remaining onion (to taste), one-third of the cheese, tomatoes, and lettuce. Fold the sides, then the bottom, and roll tightly to form burritos. Cut each burrito in half.
