Ingredients
  

  • 2 cups cooked brown rice (from about ¾ cup uncooked)
  • 1 ½ pounds boneless skinless chicken breasts, cut into thin strips (about ½-inch thickness)
  • 1 large bell pepper sliced
  • 1 small onion sliced
  • 1 can diced tomatoes 14.5 oz. can (I use fire-roasted), well drained
  • 1 tablespoon extra-virgin olive oil
  • 1 ½ teaspoons ground cumin
  • ½ teaspoon dried oregano
  • ½ teaspoon salt
  • ¼ teaspoon cayenne pepper (optional)
  • ¼ teaspoon black pepper
  • teaspoon garlic powder
  • teaspoon onion powder
  • 1-2 cups shredded cheddar cheese

Instructions
 

  • Preheat your oven to 400°F and give a 9×13 or 2-quart casserole dish a good spray of cooking spray. Set it aside and get ready for some deliciousness!
  • In a large bowl, throw all your ingredients together (except the cheese) and mix it up like you’re creating a masterpiece. If you want to skip a step, just toss everything into the casserole dish and stir it up right there.
  • Now, scoop your flavorful mixture into the prepared casserole dish and pop it in the oven. Bake, uncovered, for 20 minutes while you get ready for the cheesy goodness that’s coming next.
  • After 20 minutes, it’s time for the magic touch—sprinkle that glorious cheese all over the top and return the dish to the oven for another 10 minutes. The cheese should be bubbling and golden, and the chicken will be cooked through.
  • Let your creation rest for 5-10 minutes (if you can wait that long!), then serve and enjoy the cheesy, comforting, mouthwatering goodness you’ve just made!
