Creamy Beef Taco Soup
Ingredients
- 28 oz. Diced tomatoes
- 2 lbs. Ground beef
- 4 oz. Salsa
- 1 Small onion diced
- 2 Taco seasoning packets
- 1 Bell pepper diced
- 4 oz. Cream cheese softened
- 2 tsp. Minced garlic
- 1 C. Heavy whipping cream
- 24 oz. Beef broth
- 2 C. Shredded cheddar cheese
Instructions
- Add the ground beef, bell peppers and onions to a skillet, and saute until the meat is completely browned and the vegetables are softened.
- Place the meat mixture into an Instant Pot, then Mix in the tomatoes, beef broth, salsa, garlic and taco seasoning.
- Stir to combine.
- Close the lid, and make sure the dial is set to sealing.
- Cook on high for 2 minutes, and then allow the Instant Pot to complete a natural release before opening.
- Stir in the cream cheese, heavy whipping cream and cheddar cheese.
- Serve garnished with your favorite toppings.
