Migas make a fantastic breakfast or brunch. And there’s no reason you shouldn’t enjoy them for lunch either! The dish is Tex-Mex, perhaps deriving from Spanish cuisine too, and it’s made with affordable ingredients like eggs, corn tortillas and vegetables.

Migas are really easy to make and they might well become your new favorite breakfast dish! This versatile recipe can be tweaked however you wish and you can change any of the ingredients, perhaps using sliced mushrooms or zucchini, or swapping the corn tortillas for flour ones. You can also add cheese if you wish, although that’s optional.

How to Serve It

Serve topped with cheese if liked, and perhaps a handful of cilantro or some lime wedges. Salsa or pico de gallo and sour cream are also good to serve with migas.

You could, but it’s best made and served fresh.

Leftovers will keep for up to 3 days in an airtight container in the refrigerator.

Variations and Substitutions

Swap the corn tortillas for flour ones, omit the jalapeno for a milder result or sub serrano for a spicier one, or add any diced vegetables along with the tomato and onion.

Migas are fantastically easy to prepare and one of the best hot breakfast dishes you can make if you have a hankering for something spicy, hot and satisfying to start your day off on a great note.

Ingredients
  

  • 10 corn tortillas
  • 1 cup shredded cheese optional
  • 1 diced tomato
  • 1 diced jalapeno
  • Milk as needed
  • ¼ diced onion
  • 6 eggs
  • Salt and black pepper to taste

Instructions
 

  • Cut the corn tortillas into small pieces, then fry in oil in a skillet in 2 batches.
  • Remove the fried tortilla pieces to a bowl and add the tomato, jalapeno and onion to the skillet.
  • Beat the eggs with a splash of milk.
  • Add the tortillas back into the skillet with the vegetables.
  • Then mix in the eggs and some salt and black pepper.
  • Stir well,
  • Top with cheese, if liked, and serve hot.
  • Enjoy!
