Beef Enchiladas
Ingredients
- 2 pounds ground beef
- ¾ cup water
- 1 tablespoon salt
- 2 tablespoons chili powder
- 1½ teaspoons ground cumin
- 1½ tablespoons ground paprika
- 1½ pounds shredded cheddar cheese
- 1 teaspoon garlic powder
- 25 corn tortillas
FOR THE SAUCE:
- ½ cup vegetable oil
- ½ cup all-purpose flour
- ½ teaspoon garlic powder
- 1 tablespoon ground paprika
- 3 teaspoons ground cumin
- 3½ cups water
- 1 teaspoon salt
- 1 tablespoon chili powder
Instructions
- Cook the beef in a skillet and add ¾ cup of water, the seasonings and finally the flour.
- Cook for 2 minutes and then take it off the heat. Stir in the cheese.
- Preheat the oven to 350°F.
- Now make the sauce. Heat the oil in a pot and add the flour, whisking so it doesn’t get lumpy.
- Add the seasonings and then the water and whisk until smooth and slightly thickened.
- Dip the tortillas in the warm sauce.
- Then, fill with the beef mixture and roll up, arranging them in a greased baking dish.
- Sprinkle cheese on top
- Bake for 10 minutes or until the cheese melts.
