This delicious carne guisada, or meat stew, is made with beef and vegetables in a delicious tomato and broth based sauce. Beef stew meat is an affordable and versatile protein and it cooks low and slow until it’s literally falling-apart tender.
If you want to make this in a crockpot, you can also do that. Just put the ingredients in there after browning the meat and it will take about 8 hours to cook. That would be ideal if you want to start the stew in the morning, go to work or out for the day, and then come home to a rich and tasty meal.
This is lovely served with flour tortillas, white rice or even mashed potatoes if you want to add a not-quite-Mexican fusion element! It’s up to you whether to add green bell pepper to the stew. Red would also work or you could use something else such as carrot or sweet potatoes.
Why You’ll Love the Recipe
This stew is rich, meaty and very tasty. The low and slow cooking method makes the meat super-tender, and this is a lovely comfort food style dish. A bowlful of this will make everyone’s belly happy.
