CHICKEN FAJITAS:
- 3 boneless skinless chicken breasts
- 1 onion thinly sliced
- 3 bell peppers thinly sliced
- 2 tablespoons olive oil
- 1/2 lime
FAJITA SEASONING:
- 1/2 tablespoon chili powder
- 1/2 tablespoon ground cumin
- 1 teaspoon garlic powder
- 1/2 teaspoon paprika
- 1/2 teaspoon oregano
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
FOR SERVING:
- tortillas
- sour cream
- pico de gallo
- avocado
Instructions
- In a small bowl, combine all the fajita seasoning ingredients and stir well.
- Generously coat both sides of the chicken breasts with the seasoning, using your fingers to press it into the meat.
- Heat oil in a large skillet over medium heat. Sear the chicken breasts for 7-8 minutes on each side, or until fully cooked.
- While the chicken cooks, slice the bell peppers and onion into thin strips.
- Once the chicken is cooked, remove it from the skillet and set it aside to rest for a few minutes. Add the sliced bell peppers and onion to the same skillet and sauté for 4-5 minutes, stirring occasionally, until softened.
- When the vegetables are nearly done, slice the chicken into thin strips.
- Return the sliced chicken to the skillet, squeeze in some fresh lime juice, and stir everything to combine.
- Serve immediately with warm tortillas and optional toppings like sour cream, pico de gallo, and guacamole.
