Ingredients
  

  • 2 x 14-ounce cans crushed tomatoes
  • 2 x 14-ounce cans pinto beans drained
  • 3 chorizo sausages in ½-inch slices
  • 1 tablespoon olive oil
  • 1 sliced red bell pepper
  • 1 sliced yellow onion
  • 3 minced garlic cloves
  • 2 teaspoons dried oregano
  • 2 tablespoons tomato paste
  • 1 tablespoons red wine vinegar
  • 2 teaspoons ground cumin
  • 1 bay leaf
  • 1 tablespoon paprika

Instructions
 

  • Heat the oil in a skillet and fry the chorizo for about 5 minutes or until golden.
  • Add the onion, garlic and bell pepper to the skillet and cook, stirring, for 5 minutes.
  • Transfer the chorizo into a crockpot using a slotted spoon.
  • Add the herbs and spices and stir for a minute.
  • Add the contents of the skillet, plus the vinegar, tomato paste, canned tomatoes, and
  • Add the beans to the slow cooker.
  • Cover and cook for 4 hours
  • Serve hot.
