Ingredients
  

  • 1 shredded cooked chicken breast
  • 7 ounces chopped green chilies
  • 1 pound peeled diced russet potatoes
  • 2 teaspoons butter
  • ½ chopped yellow onion
  • 1 teaspoon dried oregano
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • ½ teaspoon dried marjoram
  • 4 cups chicken broth
  • 3 thinly sliced celery stalks

Instructions
 

  • Melt the butter in a large, heavy pot.
  • Add the celery and onion and saute for 4 minutes or until tender.
  • Add the rest of the ingredients and bring the soup to a boil.
  • Turn down the heat and simmer for 10 to 15 minutes or until the potatoes are tender.
  • Enjoy!
