Variations on the recipe?

You can swap out the ground beef for ground turkey or chicken for a lighter option. Add in black beans, corn, or diced green chilies for extra flavor and texture. For more heat, top with jalapeños or use spicy salsa. You can even make it vegetarian by omitting the meat and adding extra beans or vegetables.

Serving suggestions?

Serve this casserole with a side of sour cream, guacamole, or salsa. It also pairs well with a simple salad or a bowl of Mexican rice to round out the meal.

Storage and freezing?

Store leftovers in an airtight container in the fridge for up to 3 days. This casserole can also be frozen before or after baking. To freeze, cover tightly with foil or plastic wrap and bake directly from frozen, adding a few extra minutes to the cooking time.
