Sopa de Conchas Recipe
Ingredients
- 1 package La Moderna pasta shells
- ½ pound ground beef
- 1 can tomato sauce
- 1 can corn kernels drained
- 7 cups water
- 2 teaspoons crushed dried oregano
- 1 tablespoon oil
- Garlic powder onion powder, salt, and/or black pepper, to taste
- Knorr chicken and tomato soup concentrate to taste
- Cilantro and/or lime wedges to serve
Instructions
- Brown the ground beef, drain off any excess grease and stir in the seasonings.
- Meanwhile, heat the oil in a pan and add the pasta shells, then toast them in the oil until golden.
- Add the water, tomato sauce, ground beef, corn, soup mix, and oregano.
- Add more water if there doesn’t seem to be enough.
- Bring to a boil, then cover and turn down the heat.
- Simmer for 10 to 15 minutes or until the pasta is al dente or soft (as you prefer).
- Add salt to taste and serve hot, with cilantro and lime wedges if liked.
