Verde Wet Burritos
Ingredients
- 2 flour tortillas 10 inches
- ½ cup Spanish rice or Mexican rice
- ¾ cup pork carnitas spiced shredded pork
- 1 cup green enchilada sauce
- ¾ cup shredded white cheddar cheese
- ½ cup refried beans
Instructions
- Preheat the oven to 375°F.
- Warm the tortillas so you can fold them without them tearing.
- Combine the rice and the beans and divide this mixture between the tortillas.
- Add the meat on top and then half of the cheese.
- Fold in the sides of each burrito and then wrap tightly.
- Pour half the enchilada sauce in a square 8-inch baking dish.
- Arrange the rolled up burritos on top and then pour the rest of the sauce over them.
- Bake for 10 minutes, add the remaining cheese and cook for another few minutes until the cheese melts.
