30-Minute BBQ Jackfruit Tacos

Healthy and easy-to-make barbecue pulled jackfruit tacos that taste better than the meat version! You can whip up a family dinner in less than 30 minutes. The bonus is that these are naturally vegan and gluten-free.

- 2 cans of jackfruit in brine not syrup
- 1 onion
- 2 tbsp olive oil
- ½ cup vegetable broth
- 3 cloves garlic
- ¼ cup BBQ sauce home-made: ¼ cup tomato paste + 1 tsp smoked paprika = 1 tsp steak seasoning
- ½ tsp taco seasoning
- ½ tsp chilli powder
- 10 corn tortillas
- To garnish:
- ¼ cup fresh cilantro
- 1 avocado
- ¼ sliced jalapeno
- ⅓ cup vegan sour cream or aioli
Using a fork, break apart the chunks of jackfruit into small pieces like pulled meat. Can also use a potato masher in a colander to break up the larger chunks.
Chop onion and garlic and sauté them in a heated skillet with olive oil. Once the onion is translucent, add jackfruit and cook for another 2 minutes.
Add vegetable broth, BBQ sauce, and seasonings. Continue cooking and stirring occasionally until the liquid is reduced.
Prepare the corn tortillas with the jackfruit filling, and top with fresh cilantro, avocado slices, jalapeño slices, and a drizzle of vegan sour cream.
