Zesty Lime Shrimp and Avocado Salad
Ingredients
- 1 pound cooked peeled, chopped jumbo shrimp
- ¼ cup chopped red onion
- 1 diced tomato
- 1 diced avocado
- 1 teaspoon extra-virgin olive oil
- Juice of 1 limes
- ¼ teaspoon salt and ⅛ teaspoon black pepper
- 1 tablespoon chopped cilantro
- 1 finely diced de-seeded jalapeno
Instructions
- Put the onion, lime juice, oil, salt, and pepper in a bowl and let it sit for 5 minutes.
- Toss the shrimp with the avocado, jalapeno, and tomato.
- Now combine everything together including the cilantro and toss gently.
- Add more salt and/or pepper if needed.
